The Squash Galette

  • 2 ½ cups unbleached all-purpose flour (312g)

    1 tsp kosher salt

    1 tbsp granulated sugar

    ½ lb (2 sticks) cold vegan butter, cut into ½ inch pieces (I like earth balance sticks)

    1 cup cold water

    1/4 cup apple cider vinegar

    1 cup ice

  • Green and yellow squash, halved and thinly sliced (as pictured)

    1 shallot, thinly sliced

    1 garlic clove

    Salt and pepper

  • 8 garlic cloves (really as much garlic as you’d like…)

    Olive oil

    Fresh herbs

    • Thyme

    • Rosemary

    • Sage

    Salt and pepper
