Roasted Carrots

1 bunch of carrots
Olive oil
Salt and pepper
Seasonings of your preference (I usually go for garlic and onion powder)

1 tbsp unsweetened coconut flakes
salt
Get cooking:
Pre-heat oven to 350˚F
Shred the outside of the carrots (I like to keep the outside, up to your preference)
At this point, you can either cook the carrots in their full form with the seasonings, or….
continue to shred the carrots into thin and long pieces using a mandolin or carrot peeler. Place in a sheet pan, drizzle with olive oil and the seasonings.
For extra flavor, I add unsweetened coconut flakes on top of the carrots before placing in the oven. I find that toasting the coconut brings out the natural sweetness of the carrots :)
