Cauliflower Gnocchi

 
  • 1 Head of Cauliflower

    2 Cups of Flour

    Optional:

    1 Tsp Onion Powder

    1 Tsp Garlic Powder

    Salt & Pepper

  • Tbsp Vegan Butter

    Chopped Basil, Sage, or Rosemary

Get cooking:

  1. Cut cauliflower into small florets and boil for ~3 minutes

  2. Drain and let cool until room temperature

  3. Using a food processor, combine a ½ cup of the cauliflower with a 1/4 cup of flour

    1. Add more flour and/or cauliflower as you process to form a dough, you do not want it to be too sticky or too dry

    2. Feel free to add your seasoning in at this point

  4. Take the dough out of the food processor and place onto a cutting board with flour

  5. Using your hands, incorporate more flour into the dough and roll it until it acts as a cohesive ball

  6. Take a small section of the dough, roll it into a log, and cut into 1-inch pieces

  7. With some oil or melted butter in a pan, spread the gnocchi out in the pan and fry until golden (pictured on the left)

    1. This pasta will stick to each other, be careful!

  8. Once the gnocchi have been “fried,” you can mix in the brown butter mixture
